Shabu-Shabu

A traditional shabu-shabu meal. Shaved beef, Japanese vegetable, and two dipping sauces. You cook your own food in a recessed bowl of boiling water. Note the chef in the background cutting the meat in very thin layers. |

| After 3 hours in the San Francisco Airport, 10 1/2 hours in
the air, 1 1/2 hours by bus, and a day later, we finally reached the New
Otani Hotel in Tokyo. In a total of 30 hours since leaving home I received
only 4 hours of sleep. Even on little sleep we were greeted by over 40 student volunteers
and were 'escorted' to various restaurants in groups of 2 to 4. We ate this
amazing Japanese dish, shabu-shabu. The bowls in front of
the picture were actually recessed pots of boiling water. We were given a
plate of mixed Japanese vegetables and very thin slices of beef. We placed
our own food in these bowls and when done we took them out and dipped them
into one of two sauces. Shabu-shabu literally means "swish-swish". This
refers to the swishing action when you cook a very thin slice of beef in hot
water. I've never had such tender beef in my life
